Date Caramel
- 1 cup packed medjool dates, pitted
- 2 tablespoons creamy almond butter (or any nut/seed butter)
- 1 tablespoon coconut oil, melted
Chocolate Coating
- 1 cup chocolate chips or an 8-ounce chocolate bar
- 2 teaspoons coconut oil, melted
- Soak Dates: Soak the pitted medjool dates in a bowl of very hot water for 10 minutes to soften them, making them easier to blend into a smooth caramel.
- Make Date Caramel: Drain the soaked dates and transfer them to a food processor or high-speed blender. Add the almond butter and melted coconut oil. Pulse the mixture until it becomes completely smooth and creamy.
- Freeze the Caramel: Line a 9×5-inch loaf pan with parchment paper and spread the date caramel mixture evenly inside. Place the pan in the freezer for 2 to 3 hours, or until the caramel is firm to the touch.
- Slice Caramel Squares: Remove the firm date caramel from the freezer and lift it out of the pan using the parchment paper. Place it on a cutting board and slice into 12 small square pieces.
- Melt Chocolate Coating: In a heat-safe bowl, melt the chocolate chips along with 2 teaspoons of melted coconut oil. You can do this in short bursts in the microwave or over a double boiler on the stove, stirring until the chocolate is smooth and fully melted.
- Dip Caramels in Chocolate: Dip each date caramel square into the melted chocolate, fully coating each piece. Carefully lift each caramel and transfer it onto a parchment-lined plate.
- Chill to Set: After dipping all caramels, place the plate in the refrigerator for 1 hour or until the chocolate hardens completely.
- Enjoy or Store: Once the chocolate coating is set, enjoy your chocolate-covered date caramels. Store leftovers in the refrigerator to keep them fresh.
Notes
- Medjool dates provide natural sweetness and a chewy texture; make sure they are soft for easier blending.
- You can substitute almond butter with any nut or seed butter of your choice.
- Use dairy-free chocolate if you want to keep this recipe vegan.
- Store the caramels in an airtight container in the fridge for up to 1 week.
- For easier dipping, chill the caramel pieces slightly before dipping to keep them firm.
