For the Dough
- 1 cup Granulated sugar

For the Apple Filling
- 1/2 cup Sugar
- 2 tablespoons Flour or cornstarch
- 1/2 cup Sour cream
- 3 cups Peeled, chopped apples
- 1 teaspoon Cinnamon
- 1/4 teaspoon Ground nutmeg
For the Crumble Topping
- 1/2 cup Cold unsalted butter, cubed
- 1/2 cup Brown sugar
- 1 cup All-purpose flour
- 1/2 cup Old-fashioned rolled oats
For the Glaze
- 1 cup Powdered sugar
- 2 tablespoons Milk (adjust for thickness)
- 1 teaspoon Splash of vanilla
- Activate Yeast: Combine lukewarm milk or water with sugar and active dry yeast in a small bowl. Let the mixture sit for 5–10 minutes until it becomes foamy, indicating the yeast is active.
- Mix Dough Ingredients: In a stand mixer bowl, add the eggs, egg yolk, vanilla powder or extract, all-purpose flour, malted milk powder (or extra flour), and the foamy yeast mixture. Mix on low speed until a rough dough forms, about 2–3 minutes.
- Add Butter and Knead: Add the softened unsalted butter to the dough. Mix on medium speed and knead for 8–10 minutes until the dough becomes smooth, elastic, and fully incorporates the butter.
- First Rise: Cover the dough with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1.5 to 2 hours, or until it doubles in size.
- Prepare Apple Filling: While dough is rising, combine sugar, flour or cornstarch, sour cream, peeled chopped apples, cinnamon, and ground nutmeg in a saucepan. Cook over medium heat, stirring frequently, until the mixture thickens. Remove from heat and allow to cool completely.
- Shape Buns: Once the dough has doubled in size, punch it down gently to release air. Divide the dough into 12 equal pieces, approximately 85 grams each. Shape each piece into a smooth ball and press your thumb or fingers into the center of each ball to create a well.
- Fill and Second Rise: Spoon 1 to 2 tablespoons of the cooled apple filling into each well. Cover the buns loosely with a kitchen towel and let them rise again for 45 to 60 minutes, until puffy.
- Make Crumble Topping: In a bowl, mix the cold cubed butter, brown sugar, all-purpose flour, and rolled oats. Use your fingers or a pastry cutter to combine until the mixture forms clumps.
- Preheat Oven and Prepare Buns: Preheat your oven to 350°F (175°C). Optionally, brush the buns lightly with beaten egg or milk for a shiny finish. Then, generously top each bun with the prepared crumble mixture.
