Ingredients

Scale

Sweet Potatoes:

  • 4 medium sweet potatoes

Spiced Apple Mixture:

  • 2 tablespoons butter
  • 2 apples (such as Honeycrisp or Granny Smith), peeled and diced
  • 1 tablespoon maple syrup
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ¼ teaspoon salt

Toppings:

  • ¼ cup chopped pecans
  • 2 tablespoons dried cranberries
  • Plain Greek yogurt or whipped cream for topping

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Pierce each sweet potato several times with a fork and place them on a baking sheet. Roast in the preheated oven for 45 to 55 minutes, until tender when pierced with a fork.
  2. Prepare the apple mixture: While the potatoes roast, melt the butter in a skillet over medium heat. Add the peeled and diced apples and cook until they soften, about 5 minutes. Stir in the maple syrup, ground cinnamon, nutmeg, cloves, and salt. Continue cooking and stirring for an additional 2 minutes to let the spices blend and the mixture thicken slightly.
  3. Assemble: When the sweet potatoes are done, carefully slice them open lengthwise. Use a fork to fluff the flesh inside each potato. Spoon the warm spiced apple mixture generously into each sweet potato. Top with chopped pecans and dried cranberries to add crunch and tartness.
  4. Serve: Serve the stuffed sweet potatoes warm. Add a dollop of plain Greek yogurt or whipped cream on top for creaminess and extra flavor, if desired.

Notes

  • Try using different types of apples for varying sweetness and tartness, like Fuji or Gala.
  • For a vegan version, substitute the butter with coconut oil and use dairy-free yogurt or whipped topping.
  • These stuffed sweet potatoes make a great side dish or a light dessert option.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
