Instructions

  1. Prepare the Aromatics: Heat olive oil in a large pot over medium heat. Add the finely chopped onions and sauté for about 5 minutes until they become soft and translucent.
  2. Add Garlic: Add the minced garlic to the pot and cook for an additional minute, stirring constantly to release the garlic’s fragrant aroma without burning it.
  3. Brown the Meat: Add the choice of meat to the pot and brown it thoroughly on all sides. This process develops deeper flavor. Once browned, remove the meat from the pot and set aside.

  5. Simmer the Sauce: Return the browned meat to the pot, add the bay leaf, then cover and lower the heat to a gentle simmer. Let the sauce cook slowly for 1.5 to 2 hours, stirring occasionally. For even richer flavors, extend simmering up to 4 hours, adding a splash of water if necessary to prevent sticking.
