Salmon:
- 4 salmon fillets (6 oz each)
Boursin Mixture:
- 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
- 1 tbsp olive oil
- 1 garlic clove, minced
- Zest and juice of ½ lemon
- Salt and black pepper, to taste
- 1 tbsp fresh parsley, chopped (optional)
Optional for Roasting:
- Cherry tomatoes or asparagus
- Preheat oven: Preheat oven to 400°F (200°C). Lightly oil a baking dish or line with parchment paper for easy cleanup.
- Season salmon: Pat fillets dry and place skin-side down in the baking dish. Drizzle with olive oil, sprinkle with salt, pepper, garlic, and lemon zest.
- Top with Boursin: Break Boursin cheese into chunks and distribute evenly over each fillet.
- Bake: Bake for 15–18 minutes, or until the salmon is opaque and flakes easily. For a golden top, broil for the last 1–2 minutes (watch closely!).
- Garnish and serve: Squeeze fresh lemon juice on top, garnish with parsley, and serve immediately.
