Banana Rice Krispie Treats

Vanilla Glaze

  • ⅓ cup powdered sugar
  • 1 tablespoon heavy whipping cream or milk, plus 1-2 teaspoons more if needed
  • ½ teaspoon vanilla extract

Instructions

  1. Prepare bowls and pan: Grease an extra-large mixing bowl and an 8-inch square non-stick baking pan with butter or baking spray to prevent sticking.
  2. Mix cereal and cookies: Pour the Rice Krispies cereal into the mixing bowl. Break 14 of the vanilla wafer cookies into pieces and toss them into the cereal. Reserve the remaining 10 cookies for topping later.
  3. Melt butter and marshmallows: Cut the butter into small pieces and place them in a medium-large saucepan over LOW heat. Let the butter begin to melt, then add the marshmallows and sprinkle the banana pudding mix over top. Stir gently to combine.
  4. Melt marshmallows thoroughly: Stir the marshmallows every few minutes until about 75% have melted. Remove the pan from heat and continue stirring until all marshmallows have melted completely. Avoid overheating to keep the treats soft and chewy.
  5. Combine cereal mixture: Pour the melted banana pudding marshmallow mixture over the cereal and cookie pieces. Stir until well combined and evenly coated.
  6. Press into pan: Spread the mixture into the greased baking pan, pressing gently to form an even layer without compacting the treats too hard.
  7. Add cookie topping: Immediately press the remaining reserved vanilla wafer cookie pieces onto the top of the treats for crunch and decoration.
  8. Let rest: Allow the treats to set and rest for 30 minutes at room temperature.
