Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease your baking dish with cooking spray or line it with parchment paper to prevent sticking.
  2. Blend Cottage Cheese: Place the full-fat cottage cheese into a blender and blend until it becomes smooth, silky, and creamy to ensure a lump-free custard base.
  3. Add Remaining Ingredients: To the cottage cheese in the blender, add eggs, your choice of sweetener, vanilla extract, cornstarch or coconut flour, and lemon zest if using. Blend for about 30 seconds until the mixture is smooth and fully combined.
  4. Prepare Baking Dish: Pour the creamy batter evenly into the prepared baking dish, spreading it out smoothly to ensure even cooking.
  5. Initial Bake: Bake in the preheated oven for 10–15 minutes until the edges begin to set gently, but the center remains soft and slightly wobbly.
  6. Add Berries: Carefully remove the partially baked clafoutis from the oven and sprinkle the berries evenly over the top. They will sink slightly into the custard, creating a beautiful berry-filled dessert.
  7. Final Bake: Return the dish to the oven and bake for another 30–35 minutes until the top is golden and the center jiggles slightly when moved. The edges will puff gently, indicating it’s perfectly baked.
  8. Cool and Serve: Allow the clafoutis to cool for a few minutes. Serve warm, optionally dusted with a little powdered sweetener for extra sweetness.
