For the Bread and Brie

  • 1 round rustic bread loaf
  • 1 wheel brie cheese (approx. 12 ounces, top rind removed, triple cream preferred)
  • 2 tablespoons olive oil
  • Coarse salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh thyme leaves

For the Toppings

  • 1/2 cup fig preserves
  • 2 tablespoons honey
  • 1/4 cup shelled pistachios, roughly chopped
  • Optional: fresh thyme sprigs for garnish

Instructions

  1. Prepare the Bread and Oven: Preheat your oven to 350°F (175°C). Slice off the top quarter of the rustic bread loaf. Using the brie wheel as a guide, trace a circle in the middle of the bread and carefully hollow out the center to create space for the cheese.
  2. Create Pull-Apart Pieces: Around the edge of the bread, make cuts about 1.5 inches apart, slicing three-quarters down but not all the way through. These slits will make pull-apart pieces perfect for dipping after baking.
  3. Season and Assemble: Brush the hollowed-out bread interior with olive oil, then season with coarse salt, freshly ground black pepper, and half of the fresh thyme leaves. Place the brie wheel inside the hollowed space. Spread the fig preserves evenly over the top of the brie, sprinkle with the remaining thyme leaves, and drizzle with honey. Finally, sprinkle the chopped pistachios over the top.
  4. Bake the Bread: Replace the top of the bread loaf. Place the bread on a foil- or parchment-lined baking sheet to catch any melted cheese overflow. Bake in the preheated oven for 20 minutes, or until the brie is melted and bubbly and the bread crust is toasted.
  5. Serve and Enjoy: Remove from the oven and let cool slightly. Garnish with fresh thyme sprigs if desired. Serve warm, pulling apart the bread pieces and dipping them into the melted brie and toppings for a delicious appetizer experience.
