Taco and Filling
- 4 flour tacos
- 1 tbsp olive oil
- 1 small red onion, diced
- 2 garlic cloves, minced
- 1 small red pepper, diced
- 1 x 400g canned white beans, drained and rinsed
- 90ml buffalo hot sauce
- 100g sour cream
- 1 tsp smoked paprika
- 0.5 tsp cayenne pepper
- 0.5 tsp dried oregano
- 0.5 tsp cumin
- Salt and pepper to taste
- 150g shredded cheddar and mozzarella cheese
- 10g cilantro, chopped finely
- Prepare Vegetables: Heat the olive oil in a frying pan over medium heat. Add the diced red onion and red pepper, sautéing for 5-6 minutes until softened.
- Add Garlic: Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
- Combine Beans and Sauce: Add the drained white beans, buffalo hot sauce, sour cream, smoked paprika, cayenne pepper, dried oregano, cumin, along with salt and pepper to taste. Stir well to combine all ingredients.
- Simmer and Mash: Let the mixture warm through on medium heat. Use a wooden spoon to crush about one-third to one-half of the beans to create a thicker, creamy sauce consistency.
- Wet Tacos: Lay each flour taco across the mixture briefly to get moistened with the sauce.
- Assemble Tacos: Spoon the white bean mixture onto half of each taco, then sprinkle shredded cheddar and mozzarella cheese on top.
- Fry Tacos: Fold tacos and fry in the pan for 2 minutes on each side over medium heat until golden and crispy and cheese is melted.
- Garnish and Serve: Remove tacos from the pan, scatter chopped cilantro over them, and serve immediately with extra sour cream for dipping.
