For the toppings:

  • 1 Cup Marinara Sauce
  • 8 oz Log goat’s cheese, cut into 10 slices
  • 1/2 Cup fresh parmesan cheese
  • 1 Onion, thinly sliced
  • 1 Tablespoon olive oil
  • Small bunch fresh spinach leaves
  • 2 Tablespoons dried oregano

Instructions

  1. Prepare the dough mix: In a large mixing bowl, combine the bread flour, sea salt, instant yeast, and sugar. Mix thoroughly. Drizzle in extra virgin olive oil and stir quickly.
  2. Form the dough: Make a well in the flour, pour in about 1 1/2 cups warm water, and use a fork to incorporate the flour into the water. If dough is too dry, add up to 1/4 cup more water until sticky.
  3. Knead the dough: Turn dough onto a floured surface and knead by hand for 5–10 minutes until soft, elastic, and springs back when touched.
  4. First rise: Place dough ball in a floured bowl, cover with damp cloth and let rise in a warm place for 1–2 hours until doubled in size.
  5. Prepare caramelized onions: Heat a skillet over medium heat, add 1 tablespoon olive oil, and sliced onions. Stir and cook on high for 3–5 minutes until browning, then reduce to medium and cook 15–20 minutes, stirring occasionally and adding water if needed to avoid burning. Remove from heat once caramelized.
  6. Shape the pizza base: Punch down risen dough, roll out on floured surface to 10–12 inch round. Place on parchment paper and transfer to a pizza peel or board.
  7. Assemble the pizza: Spread marinara sauce over the base, sprinkle with dried oregano, add caramelized onions, place goat cheese slices, sprinkle parmesan, and scatter fresh spinach leaves on top.
  8. Bake the pizza: Preheat oven to 500°F with pizza stone or cast iron on bottom rack. Slide pizza (with parchment) onto stone and bake 4–6 minutes until golden, crisp, and risen.
  9. Serve and repeat: Remove pizza from oven, serve immediately, and repeat the process for remaining dough.
