Instructions

  1. Preheat the Oven: Set your oven to 350℉ to prepare for baking the biscuit crust and casserole later.
  2. Cook the Ground Beef: Heat a large skillet over medium-high heat. Add the ground beef and break it apart with a spoon. Cook, stirring occasionally, until the meat is fully browned and no longer pink. Drain excess fat from the skillet. While the beef cooks, you can begin preparing the biscuit dough.
  3. Prepare the Biscuit Dough: In a medium mixing bowl, combine the biscuit mix and water. Stir until well incorporated and knead lightly with your hands for thorough mixing. Grease a 9 x 13-inch casserole dish with cooking spray. Press the dough evenly into the dish, pushing it out to the edges. Bake in the preheated oven for 5 to 8 minutes, until the dough sets and turns lightly golden. Remove from oven and keep the oven on.
  4. Cook the Vegetables: To the skillet with cooked ground beef, add the chopped onion and red bell pepper. Cook for about 4 minutes until softened. Stir in the taco seasoning mix until evenly distributed, then remove the skillet from the heat.
  5. Assemble the Layers: Spread the cooked ground beef and vegetable mixture evenly over the pre-baked biscuit crust in the casserole dish.
  6. Prepare the Sour Cream Layer: In another medium bowl, combine sour cream, mayonnaise, drained diced green chiles, ¾ cup of the shredded cheddar cheese, and garlic powder. Mix well until smooth. Carefully spread this sour cream mixture evenly over the ground beef layer.
  7. Add Salsa and Cheese: Spoon small dollops of salsa across the sour cream layer, leaving them as little mounds without spreading. Finally, sprinkle the remaining ¾ cup shredded cheese evenly over the top for a cheesy finish.
  8. Bake: Return the assembled casserole to the oven, uncovered. Bake for 30 minutes or until the top is hot, bubbly, and cheese is melted and slightly golden. Remove from oven and let it cool slightly before serving.
