Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 cup long-grain rice, uncooked
  • 2 cups beef broth
  • 1 (10.75 oz) can cream of mushroom soup
  • 1 cup cheddar cheese, shredded

Seasonings and Garnish

  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and grease a 9×13 inch baking dish to prevent the casserole from sticking.
  2. Cook the beef mixture: In a large skillet over medium heat, cook the ground beef along with the chopped onion and minced garlic until the beef is fully browned. Drain excess fat to keep the dish from being greasy.
  3. Add rice and liquids: Mix in the uncooked rice, beef broth, and cream of mushroom soup. Season the mixture with salt, black pepper, and paprika. Bring everything to a boil, then reduce heat and let it simmer gently for 5 minutes to slightly cook the rice and blend flavors.
  4. Transfer and bake covered: Pour the mixture into the prepared baking dish and cover with aluminum foil. Bake in the preheated oven for 25 minutes to allow the rice to fully cook.
  5. Add cheese and finish baking: Remove the foil, evenly sprinkle shredded cheddar cheese on top, and bake uncovered for another 10-15 minutes or until the cheese melts and becomes bubbly and golden.
  6. Garnish and serve: Take the casserole out of the oven, sprinkle with freshly chopped parsley for a bright pop of color and flavor, then serve warm.

Notes

  • For a vegetarian version, substitute the ground beef with plant-based meat alternatives or add extra vegetables like mushrooms, bell peppers, or zucchini.
  • To add a spicy kick, include a diced jalapeño or a pinch of crushed red pepper flakes before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
  • Freeze any leftovers in a proper freezer-safe container for up to 3 months. Thaw before reheating.
