Ingredients

Scale

Mashed Potatoes

  • 2 cups warm mashed potatoes

Chicken

  • 6 ounces cooked chicken nuggets (about 12 to 16 nuggets) (we recommend Just Bare brand)

Other Components

  • 1/2 cup prepared gravy of your choice (chicken or turkey gravy preferred)
  • 1/2 cup cooked corn
  • 1/4 cup shredded Colby-Jack cheese
  • Salt and pepper, to taste
  • Parsley, for garnish (optional)

Instructions

  1. Prepare the Mashed Potatoes: Use any mashed potatoes you prefer, such as Garlic Parmesan Mashed Potatoes or Crock Pot Creamy Mashed Potatoes. Leftover mashed potatoes work wonderfully for this recipe, so warm 2 cups of mashed potatoes until hot.
  2. Cook the Chicken Nuggets: Cook 6 ounces (about 12 to 16 nuggets) of chicken nuggets according to the package directions. Air-frying is recommended for a crispy texture, but oven baking or pan frying also works well.
  3. Prepare the Gravy: While the chicken cooks, heat 1/2 cup of your chosen gravy in a small saucepan over the stovetop until warmed through. A gravy packet is convenient and tasty.
  4. Cook the Corn: In a separate pan on the stove, cook 1/2 cup of corn until heated through.
  5. Assemble the Bowls: Place 1 cup of warm mashed potatoes at the bottom of each bowl. Divide the cooked chicken nuggets evenly between the bowls, then add cooked corn and sprinkle 1/4 cup shredded Colby-Jack cheese evenly on top.
  6. Finish and Serve: Drizzle the warm gravy over the assembled bowls. Season with salt and pepper to taste. Garnish with chopped parsley if desired for a fresh burst of color and flavor. Serve immediately and enjoy your comforting Chicken Mashed Potato Bowls!

Notes

  • Leftover mashed potatoes work great for this recipe, saving prep time.
  • Air-frying chicken nuggets adds crispiness without extra oil.
  • You can substitute corn with other vegetables like peas or green beans based on preference.
  • Gravy packets are a quick and easy option, but homemade gravy can enhance flavor.
  • Adjust the salt and pepper according to your taste.
  • Garnish with parsley or chives for added freshness and presentation.
