Instructions

  1. Make Coffee Syrup: Heat the warm coffee, 6 tablespoons of granulated sugar, and 2 teaspoons of cinnamon in a small saucepan over medium-low heat until the sugar dissolves completely. Remove from heat and let it cool to room temperature.
  2. Prepare Mascarpone Mixture: In a mixing bowl, combine the softened mascarpone cheese, molasses, ½ teaspoon ground cinnamon, ground ginger, and ground nutmeg. Mix well until the mixture is smooth and evenly blended.
  3. Whip Cream: Using an electric mixer or a whisk, whip the heavy cream with 2 tablespoons of sugar until medium peaks form, making sure the cream holds its shape but is still smooth.
  4. Combine Cream and Mascarpone: Gently fold the whipped cream into the mascarpone mixture with a spatula. Be careful not to overmix to maintain a light and fluffy texture.
  5. Layer Ladyfingers: Quickly dip each side of the ladyfingers into the cooled coffee syrup—do not soak. Line the bottom of a 9×13-inch pan with the dipped ladyfingers, trimming to fit if necessary.
  6. Add Mascarpone Mixture: Spread one third of the mascarpone mixture evenly over the layer of ladyfingers using an offset spatula.
  7. Sprinkle Gingersnaps: Evenly sprinkle a layer of crushed gingersnaps over the mascarpone layer to add texture and a gingerbread flavor.
