Instructions

  1. Blend the Cheese and Milk: In a high-speed blender, combine 1/2 cup milk and 1 1/4 cups cottage cheese. Blend until the mixture is completely smooth to create the creamy base for your Alfredo sauce.
  2. Cook Garlic and Begin Sauce: Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add 2 cloves minced garlic and cook for 1 to 2 minutes until fragrant, but not browned. Reduce heat to low.
  3. Add Cheese Mixture and Seasonings: Pour the blended cottage cheese mixture into the pan along with 1 cup freshly grated parmesan cheese and 1/2 teaspoon Italian seasoning. Stir gently over very low heat to melt the parmesan and combine the flavors without overheating.
  4. Simmer Sauce Carefully: Keep the sauce on very low heat, stirring to melt the parmesan cheese evenly. Be careful not to allow the sauce to get too hot or it may curdle, compromising the smooth texture.
  5. Cook Pasta: While the sauce simmers, prepare 12 ounces of your chosen pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining. Rinse the drained pasta with cool water to stop the cooking process.
  6. Toss Pasta with Sauce: Return the pasta to low heat and toss it with the Alfredo sauce, adding reserved pasta water as needed to loosen the sauce. Heat gently until warmed through. Avoid overheating to prevent the sauce from separating.
