Ganache
- 1 cup white chocolate chips
- 1/2 cup heavy cream
- 1 teaspoon freshly grated orange zest
- 1 teaspoon vanilla extract
- 1/4 cup freshly squeezed orange juice
Coating and Rolling
- 1 cup crushed graham crackers
- 1/2 cup powdered sugar
- 1/2 cup orange-flavored candy coating or white chocolate for coating
- Extra orange zest for garnish (optional)
- Make the Ganache: In a small saucepan over medium heat, combine the heavy cream and white chocolate chips. Stir continuously until the chocolate fully melts and the mixture is smooth, about 3-5 minutes, making sure it doesn’t boil.
- Incorporate Flavorings: Remove the pan from heat and stir in the freshly grated orange zest, vanilla extract, and freshly squeezed orange juice until well mixed. Allow the ganache to cool to room temperature for 15-20 minutes.
- Chill the Ganache: Cover the ganache bowl with plastic wrap or lid and refrigerate for 1-2 hours until firm enough to scoop and roll.
- Prepare Workspace: Line a baking sheet with parchment paper for placing the truffles.
- Scoop and Roll Truffles: Using a small cookie scoop or tablespoon, portion out about 1 inch diameter portions of the ganache. Dust hands with powdered sugar if sticky, then roll each portion between your palms to form smooth balls. Place the truffles on the prepared baking sheet.
- Firm Up Truffles: Refrigerate the rolled truffles for an additional 30 minutes to help them firm up before coating.
- Melt the Coating: In a microwave-safe bowl, melt the orange-flavored candy coating or white chocolate, adding a teaspoon of vegetable oil if using white chocolate. Heat in 30-second intervals, stirring in between until smooth, then let it cool slightly.
- Coat the Truffles: Remove the chilled truffles from the refrigerator. Using a fork or dipping tool, dip each truffle into the melted coating ensuring full coverage. Tap off excess coating by tapping the fork on the edge of the bowl.
- Set and Garnish: Place the coated truffles back onto the parchment-lined baking sheet. Optionally, sprinkle with extra orange zest for garnish. Allow coating to set before serving.
Notes
- Ensure the ganache is well chilled to make rolling easier.
- Use high-quality white chocolate and orange-flavored coating for best taste and texture.
- Store truffles in an airtight container in the refrigerator for up to 1 week to maintain freshness.
- Dusting hands with powdered sugar prevents ganache from sticking during rolling.
- If orange-flavored candy coating is unavailable, white chocolate with orange zest added can be a substitute.
