- Roast first phase: Roast in the oven for 30 minutes. After this time, remove the baking sheet and toss the chickpeas well to promote even browning.
- Roast second phase: Return the chickpeas to the oven and roast for an additional 25 to 30 minutes or until the chickpeas are darkened, crunchy, and dried out. Watch carefully as oven performance varies; you can roast up to 55 minutes at 400°F for extra dark crispiness.
