Ingredients

Scale

Main Ingredients

  • 1 lb roast beef, thinly sliced, deli-style or leftover
  • 1.5 cups shredded cheese, mozzarella or provolone
  • 4 large flour tortillas, soft yet sturdy

Seasonings and Sauces

  • 2 tablespoons butter, melted (for brushing)
  • 1 teaspoon garlic powder (adds aromatic depth)
  • 1 teaspoon onion powder (essential for flavor)
  • 1 teaspoon dried parsley (for color and flavor)

Au Jus Ingredients

  • 2 cups beef broth (base for the au jus)
  • 1 tablespoon Worcestershire sauce (adds richness)
  • 1 teaspoon soy sauce (for umami flavor)
  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking and help with easy cleanup.
  2. Assemble the Roll Ups: Lay each flour tortilla flat on the prepared baking sheet. Distribute thin slices of roast beef evenly over the tortillas, then sprinkle shredded mozzarella or provolone cheese over the top, leaving about an inch of space at the edges to allow easy rolling.
  3. Roll and Season: Fold the sides of the tortilla slightly inward before carefully rolling from the bottom up, making sure to keep the filling snug. Place each roll seam-side down on the baking sheet. Brush the outside of each roll with melted butter and evenly sprinkle garlic powder, onion powder, and dried parsley over them to add flavor and color.
  4. Bake the Roll Ups: Bake the roll ups in the preheated oven for 12 to 15 minutes, or until the tortillas are golden brown and crispy and the cheese has melted inside.
  5. Prepare the Au Jus: While the roll ups bake, combine beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, salt, and pepper in a saucepan. Bring the mixture to a simmer and allow it to cook gently for 5 to 7 minutes to develop rich flavors.
  6. Serve: Remove the roll ups from the oven and let them cool slightly. Slice them into bite-sized pieces using a sharp knife for clean cuts. Serve warm alongside the hot au jus for dipping, providing a delicious, savory accompaniment.

Notes

  • Use a sharp knife to achieve clean, neat slices after baking.
  • Do not overstuff the tortillas to ensure they roll up neatly and cook evenly.
  • Position the roll ups in the center of the oven for even baking.
  • Serve immediately after baking to maintain crisp texture and melted cheese.
