Instructions

  1. Season the Chicken: Rub the chicken breasts with Cajun seasoning, paprika, garlic powder, salt, and pepper. For best flavor, optionally marinate the chicken for 15–20 minutes.
  2. Set Up the Slow Cooker: Place the seasoned chicken in the slow cooker. Add the sliced red and green bell peppers, yellow onion, and chicken broth on top.
  3. Cook the Chicken and Vegetables: Cook on low heat for 6–7 hours or on high for 3–4 hours until the chicken is tender and fully cooked.
  4. Shred the Chicken: Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken back to the slow cooker.
  5. Add Cream Cheese and Parmesan: Stir in the cubed cream cheese and shredded Parmesan cheese into the slow cooker until the cheese melts completely and the sauce becomes creamy. Let it cook an additional 10–15 minutes on low to thicken.
  6. Cook Pasta: Meanwhile, cook the pasta separately according to package instructions until al dente. Drain thoroughly.
  7. Combine Pasta and Sauce: Stir the cooked pasta into the creamy chicken mixture in the slow cooker until well combined.
  8. Serve: Serve the creamy Cajun chicken pasta hot, topped with optional fresh parsley, extra Parmesan cheese, and crushed red pepper flakes for added flavor and spice.
