Ingredients

Scale

Chicken and Sauce

  • Olive oil spray
  • 1 ½ lbs chicken breast (about 4 medium breasts)
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion granules
  • 1 teaspoon Italian seasoning mix
  • ½ teaspoon paprika
  • ¼ teaspoon red chili flakes
  • 1 ½ cups chicken broth

Pasta and Cheese

  • 1 lb cheese tortellini
  • 1 cup mozzarella cheese, shredded
  • ½ cup heavy cream
  • ⅓ cup Parmesan cheese, grated

Vegetables

  • 2 cups baby spinach

Instructions

  1. Prepare the slow cooker: Spray the slow cooker with olive oil to prevent sticking and make cleanup easier.
  2. Arrange chicken: Place the chicken breasts in a single layer at the bottom of the slow cooker.
  3. Add sauce and spices: Pour the marinara sauce over the chicken, then sprinkle garlic powder, onion granules, Italian seasoning, paprika, and red chili flakes evenly. Pour in the chicken broth for moisture.
  4. Cook chicken: Cover and cook on LOW for about 4 hours until the chicken is fully cooked and tender.
  5. Shred chicken: Remove the chicken breasts and shred them using two forks, then return the shredded chicken to the slow cooker and mix well into the sauce.
  6. Add tortellini and cheese: Stir in the cheese tortellini, shredded mozzarella, and heavy cream until well combined.
  7. Cook pasta and cheese mixture: Cover and continue cooking on LOW for another 30 minutes to cook the tortellini through and blend flavors.
  8. Add spinach: Stir in the baby spinach and cook for an additional 10 minutes until the spinach wilts.
  9. Finish and serve: Stir in grated Parmesan cheese, taste for seasoning, and adjust salt or spices as needed before serving.

Notes

  • You can substitute fresh mozzarella for shredded if preferred; just dice it before adding.
  • If you like a spicier dish, increase the red chili flakes slightly.
  • Feel free to swap baby spinach with kale or Swiss chard if preferred.
  • Use gluten-free tortellini to make the dish suitable for gluten-sensitive individuals.
  • Make sure not to overcook the tortellini in the crockpot to avoid mushiness; 30 minutes is ideal.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stove or microwave.
