4.8 from 75 reviews

These Dark Chocolate Dragon Fruit Coconut Treats are a naturally sweet and vibrant no-bake snack combining tropical dragon fruit and shredded coconut with the richness of dark chocolate. They offer a delightful texture contrast between chewy, fruity coconut dough and a smooth chocolate coating, perfect for a healthy, energizing treat.

Ingredients

Scale

For the Treats:

  • 2 cups unsweetened shredded coconut
  • ½ cup pitaya (dragon fruit) cubes
  • 2 tablespoons maple syrup
  • ½ teaspoon sea salt
  • 1 teaspoon beet juice (optional, for color)
  • 23 ounces dark chocolate (70-72%), chopped

Instructions

  1. Prepare the Dough: Line a loaf pan or small baking dish with parchment paper. In a food processor, combine shredded coconut, pitaya cubes, maple syrup, and sea salt. Blend until the mixture reaches a dough-like consistency. If using beet juice for coloring, add it to the mixture and blend again until evenly incorporated.
  2. Shape the Treats: Using your hands, press the dough into the loaf pan or shape it into a uniform rectangle on a prepared baking sheet. Cover the pan or dish with plastic wrap and refrigerate for several hours or overnight to allow the mixture to set and firm up.
  3. Melt the Chocolate: In a double boiler, melt the chopped dark chocolate over low heat, stirring occasionally until smooth.
  4. Dip the Treats: Once the dough has chilled, cut it into bars or roll into balls. Using a fork, dip each piece into the melted chocolate, letting the excess chocolate drip off. Place the coated treats back on the parchment paper to set.
  5. Allow to Set: Let the treats dry and set at room temperature or place them in the refrigerator to speed up the process.
  6. Serve: Once the chocolate has hardened, the treats are ready to enjoy. For best texture and flavor, remove from the fridge at least 15 minutes before serving.

Notes

  • If beet juice is unavailable, omit it or alternatively use a few drops of natural red food coloring for a pinker hue.
  • The chocolate can be switched to a vegan variety if preferred to maintain a vegan treat.
  • Store leftovers in an airtight container refrigerated for up to one week.
  • For a firmer texture, allow the treats to chill overnight before dipping in chocolate.
  • Adjust maple syrup quantity to taste for desired sweetness.
