  • 13 teaspoon tomato paste (optional)

Instructions

  1. Prepare sardines: Remove the sardine fillets from the can, reserving the olive oil separately. Place the sardines in the food processor, discarding excess olive oil except for a spoonful to be added later.
  2. Add ingredients: Add the lemon juice, diced onion, chopped parsley, butter cubes, and optional tomato paste to the food processor alongside the sardines.
  3. Pulse to combine: Pulse the mixture a few seconds until roughly combined. Add a spoonful of the reserved olive oil and continue pulsing.
  4. Adjust seasoning and texture: Pause to taste the pâté, then add salt and pepper to your liking. If the spread is too thick, add more olive oil gradually while pulsing until a smooth texture is achieved.
  5. Serve: Transfer the pâté into a serving bowl and serve immediately with toasted bread or crackers.
