For the donuts:

  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg

For the cinnamon sugar coating:

  • 1/3 cup granulated sugar
  • 2 tablespoons butter, melted
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350ºF and lightly spray a donut pan with non-stick cooking spray.
  2. In a medium bowl, whisk together pumpkin puree, brown sugar, vegetable oil, and milk until smooth.
  3. In a smaller bowl, combine flour, baking powder, pumpkin pie spice, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to wet ingredients, stirring gently with a spatula until just combined.
  5. Transfer batter to a piping bag or zip-top bag. Pipe into the donut pan, filling each cavity about three-quarters full.
  6. Bake for 15–16 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes.
  7. Turn donuts onto a wire rack and let cool for another 10 minutes.
  8. Melt butter and brush each donut, or dip them quickly. Mix sugar and cinnamon in a bowl, then coat donuts on both sides.

Notes

  • Avoid overmixing the batter to keep donuts soft and tender.
  • Coat the donuts while they are still slightly warm so the cinnamon sugar sticks better.
  • If storing for later, wait to coat with sugar until just before serving.
