Ripe Mango Puree
- 12 oz fully ripened and tender mangoes, peeled, pitted, and diced
Gelatin Mixture
- 2 tbsp cold water
- 1.5 tbsp gelatin or 1.5 tsp agar agar powder for a vegan version
- 1.5 tbsp white granulated sugar
- 0.54 cups coconut milk (full fat) or substitute with evaporated milk, heavy cream, or evaporated coconut milk

- Prepare the mango puree: Transfer the diced mango chunks to a blender or food processor and blend until smooth. For an extra creamy texture, strain the puree using a fine sieve to remove any pulp fibers.
- Make the gelatin mixture: In a bowl, mix the cold water with gelatin powder (or agar agar for the vegan option) and let it bloom. Then add sugar, coconut milk, and the smooth mango puree to the gelatin mixture. Whisk until the mixture is fully combined and smooth.
- Heat the mixture: Pour the combined mixture into a pot and gently heat it on low to medium heat. Stir continuously and heat just until the gelatin completely dissolves. Avoid bringing the mixture to a boil as it can affect the setting of the pudding.
- Pour and chill: Once the gelatin has dissolved, pour the mixture evenly into serving bowls or molds. Allow the pudding to cool at room temperature briefly, then refrigerate it covered for at least 6 hours or overnight until fully set.
