Instructions

  1. Caramelize the Onions: Heat 1 tablespoon of olive oil in a large skillet over medium-low heat. Add the thinly sliced onions and cook, stirring occasionally, for 20-25 minutes until they become golden and caramelized. If the onions start browning too quickly, reduce the heat. Once caramelized, remove the onions from the skillet and set them aside.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Add the farfalle pasta and cook according to the package instructions until al dente. Before draining, reserve 1/2 cup of the pasta cooking water.
  3. Sauté the Mushrooms and Spinach: In the same skillet used for the onions, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Then add the sliced mushrooms and sauté for 5-6 minutes until they turn golden brown. Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
  4. Combine and Serve: Return the caramelized onions to the skillet and add the cooked farfalle pasta. Toss everything together, adding some of the reserved pasta water as needed to create a cohesive sauce. Season with salt, black pepper, and dried thyme if using. Serve the pasta with a sprinkle of grated Parmesan cheese and garnish with fresh parsley if desired.
