Ingredients

Scale

Chicken and Seasoning

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp red pepper flakes (optional)

Vegetables and Broth

  • 1.5 lb baby potatoes, halved
  • 1 cup chicken broth

Cheese and Garnish

  • 0.5 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Prepare Ingredients: Wash and halve the baby potatoes. Mince the garlic cloves finely and set aside for later use.
  2. Season Chicken: Rub the chicken breasts thoroughly with olive oil, then sprinkle and rub in the Italian seasoning, salt, black pepper, and red pepper flakes if using, ensuring even coating for full flavor.
  3. Layer in Crockpot: Arrange the halved baby potatoes in an even layer at the bottom of the crockpot. Place the seasoned chicken breasts on top of the potatoes carefully.
  4. Add Broth and Garlic: Pour the chicken broth over the chicken and potatoes evenly to coat. Then, sprinkle the minced garlic across the chicken breasts to distribute the flavor.
  5. Top with Parmesan: Generously sprinkle the grated Parmesan cheese over the top of the chicken and garlic layer.
  6. Cook: Cover the crockpot and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.
  7. Serve: Carefully remove the chicken and potatoes from the crockpot. Spoon the flavorful sauce from the bottom over the top of the chicken and potatoes for extra taste.
  8. Garnish and Enjoy: Garnish with fresh chopped parsley before serving to add a fresh color and mild herbal flavor.

Notes

  • For a thicker sauce, remove the chicken and potatoes after cooking and reduce the remaining liquid on the stovetop until desired consistency.
  • Add extra vegetables such as carrots, bell peppers, or onions for more variety and nutrition.
  • Ensure the chicken is evenly seasoned for the best flavor distribution.
  • Garnish with fresh parsley for color and added freshness just before serving.
