Ingredients

Scale

Meatloaf Mixture

  • 450 grams ground chicken
  • 60 grams grated Parmesan cheese
  • 60 grams breadcrumbs
  • 15 grams fresh parsley, finely chopped
  • 3 garlic cloves, minced
  • 1 large egg, beaten
  • 1 teaspoon dried oregano
  • 0.5 teaspoon fine sea salt
  • 0.25 teaspoon freshly ground black pepper
  • 60 millilitres whole milk
  • 2 tablespoons extra virgin olive oil
  • 25 grams grated mozzarella cheese (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
  2. Mix Ingredients: In a large mixing bowl, combine the ground chicken, grated Parmesan, breadcrumbs, finely chopped parsley, minced garlic, beaten egg, dried oregano, salt, and black pepper thoroughly to distribute all flavors evenly.
  3. Add Milk: Pour in the whole milk and gently mix the mixture until it becomes uniform and cohesive, making sure not to overwork the meat to keep the texture tender.
  4. Shape Meatloaves: Divide the mixture evenly into four portions and shape each into a compact mini loaf. Arrange them spaced apart on the prepared baking sheet for even cooking.
  5. Add Olive Oil and Cheese: Drizzle the extra virgin olive oil over each mini meatloaf. If desired, sprinkle grated mozzarella cheese on top of each one to add a melty, cheesy crust.
  6. Bake: Place the baking sheet in the preheated oven and bake for 25 to 30 minutes, or until the meatloaves are golden brown and reach an internal temperature of 74°C (165°F) to guarantee they are fully cooked.
  7. Rest and Serve: Remove the meatloaves from the oven and let them rest for 5 minutes to allow juices to redistribute before serving. This improves flavor and moisture retention.

Notes

  • Make sure to use fresh parsley for the best flavor enhancement.
  • You can substitute breadcrumbs with gluten-free breadcrumbs if desired.
  • The mozzarella cheese topping is optional; it adds extra richness and a melty texture.
  • Use a meat thermometer to ensure meatloaves reach a safe internal temperature of 74°C.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 1 month.
