  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened to room temperature
  • 3/4 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 teaspoon vanilla extract
  • 1/3 cup molasses (not blackstrap)
  • 1/3 cup turbinado or granulated sugar

For the Eggnog Buttercream

  • 6 tablespoons unsalted butter, softened to room temperature
  • 23 cups icing sugar, sifted
  • 34 tablespoons eggnog
  • 1/4 teaspoon rum extract, optional

Instructions

  1. Ginger Molasses Cookies: In a large bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.
  2. Cookie Dough: Using an electric mixer, beat butter and brown sugar until smooth. Add egg, egg yolk, vanilla, and molasses. Mix in the flour mixture until combined. Refrigerate for 30 minutes to 24 hours.
  3. Baking: Preheat oven to 350°F. Form dough into balls, roll in sugar, and place on lined baking sheets. Bake for 8-10 minutes. Cool on a wire rack.
  4. Eggnog Frosting: Beat butter until softened. Gradually add icing sugar, eggnog, and rum extract until smooth and spreadable.
  5. Assembly: Frost the bottom of one cookie, sandwich with another. Repeat to make 16-18 sandwiches.
