Instructions

  1. Preheat and Prepare Baguette: Preheat your oven to 375°F (190°C). Slice the baguette either into approximately 24 rounds each about ¼-inch thick for classic crostini or cut it lengthwise and then slice at an angle into 3-inch pieces for longer toasts. Arrange the slices in a single layer on an unlined baking sheet.
  2. Brush and Bake Crostini: Lightly brush both sides of each baguette slice with extra virgin olive oil. Bake in the preheated oven for 5 minutes, flip the slices, and bake for an additional 5 to 7 minutes until golden brown and crispy with a lightly crunchy interior.
  3. Prepare Bruschetta Topping: While the crostini cooks, finely dice the Roma tomatoes and English cucumber, making the pieces as small as possible to get more topping per slice. Chop the green onions and crumble the feta cheese.
  4. Mix Dressing and Combine: In a mixing bowl, whisk together the juice of one lemon, ¼ cup olive oil, and 1 teaspoon red wine vinegar. Season with ½ teaspoon garlic powder, ½ teaspoon salt, ¼ teaspoon freshly ground black pepper, ¼ teaspoon dried oregano, ⅛ teaspoon dried dill, and add either ½ teaspoon dried basil or 1 tablespoon fresh chopped basil. Stir in the diced tomatoes, cucumber, crumbled feta, and chopped green onions until well combined.
