Vegetables
- 1 medium onion, chopped
- 3 sticks celery, chopped
- 4 cloves garlic, minced
- 2 Russet potatoes, peeled and diced

Thickening and Seasoning

- Sauté Vegetables: Add the olive oil, chopped onion, and celery to a soup pot and sauté over medium-high heat for 5-7 minutes until the vegetables have softened and begun to brown slightly.
- Add Garlic: Stir in the minced garlic and cook for 30 seconds, allowing the garlic to release its aroma but not burn.
- Brown the Beef: Add the lean ground beef to the pot. Cook it while breaking it apart with your spoon until it is fully browned and no longer pink, about 8 minutes.
- Incorporate Flour: Sprinkle the flour over the beef mixture and cook for 1-2 minutes, stirring often to cook off the raw flour taste and begin to thicken the stew.
- Add Tomato Paste: Stir in the tomato paste to combine evenly with the beef mixture, giving the stew a rich base.
- Add Liquids and Seasoning: Pour in the beef broth, Worcestershire sauce, and sprinkle in the Italian seasoning. Stir well to combine all ingredients.
- Add Root Vegetables: Add the diced potatoes and sliced carrots to the pot. Increase heat to high to bring the stew to a boil.
- Simmer Stew: Reduce the heat to a rapid simmer and cover the pot with the lid slightly ajar. Cook, stirring occasionally, for at least 30 minutes or until the potatoes and carrots are tender and the flavors meld together. If the stew becomes too thick, add more broth. For thicker stew, continue cooking uncovered to reduce liquid.
- Finish and Season: Stir in the frozen peas (if using) and season the stew with salt and pepper to taste. Cook for an additional 2-3 minutes until peas are heated through.

- For a thicker stew, use less broth or simmer longer uncovered.
