For the Bread:
- 3/4 cup granulated sugar
- 1/2 cup whole milk
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups fresh peaches, diced
For the Glaze:
- 2 cups powdered sugar
- 2 tablespoons melted butter
- 1/3 cup finely diced peaches
- 1/2 teaspoon vanilla extract
- 1–2 tablespoons heavy cream (if needed)
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan thoroughly to prevent sticking.
- Mix wet ingredients: In a medium bowl, whisk together granulated sugar, whole milk, vegetable oil, egg, and pure vanilla extract until the mixture is smooth and well combined.
- Combine dry ingredients: In a separate bowl, whisk the all-purpose flour, baking powder, and salt together ensuring even distribution of the leavening agents and salt.
- Incorporate dry into wet: Gently fold the dry ingredients into the wet ingredients just until combined, being careful not to overmix to maintain a tender crumb.
- Add peaches: Carefully fold in the diced fresh peaches to the batter, distributing them evenly without crushing.
- Bake: Pour the batter into the prepared loaf pan. Bake for 55 to 60 minutes or until the bread turns golden brown and a toothpick inserted in the center comes out clean.
- Cool bread: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Prepare glaze: In a small bowl, mix powdered sugar, melted butter, finely diced peaches, and vanilla extract until smooth. Add 1 to 2 tablespoons of heavy cream if needed to achieve desired consistency.
- Glaze and serve: Spread the glaze evenly over the cooled bread before slicing and serving to enhance flavor and moisture.
Notes
- Choose ripe but firm peaches for the best texture and flavor.
- Store glazed bread in the refrigerator for up to 5 days to maintain freshness.
- You can freeze unglazed bread for up to 3 months; glaze after thawing for best results.
