Ingredients

Scale

Soaking Ingredients

  • 1 cup rolled oats
  • 1 cup warm milk (240 ml)

Yeast Mixture

  • 2 teaspoons active dry yeast
  • 1/4 cup warm water (60 ml)
  • 1 tablespoon honey

Dough Ingredients

  • 1/4 cup honey (60 ml)
  • 1/4 cup melted butter (60 ml)
  • 3 cups all-purpose flour (375 g)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Soften Oats: Combine the rolled oats with warm milk in a small bowl and let them soak for 10 minutes to soften, which adds moisture and texture to the bread.
  2. Activate Yeast: In a separate bowl, dissolve the active dry yeast in warm water, add honey, and allow it to sit for 5-10 minutes until the mixture becomes bubbly, indicating the yeast is active.
  3. Combine Wet Ingredients: Add the softened oats, melted butter, and additional honey to the yeast mixture. Stir well to combine all wet ingredients evenly.
  4. Make Dough: Gradually add the flour, ground cinnamon, and salt to the wet mixture. Stir until a shaggy dough forms.
  5. Knead Dough: Transfer the dough onto a lightly floured surface and knead for 8-10 minutes until it becomes smooth and elastic. If the dough is sticky, add flour a tablespoon at a time.
  6. First Rise: Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm spot for 1 to 1.5 hours, or until it doubles in size.
  7. Punch Down and Shape: Deflate the risen dough by punching it down, shape it into a loaf, and place it in a greased loaf pan for the second rise.
  8. Second Rise: Allow the dough to rise again in the pan for about 30-40 minutes until it puffs up.
  9. Bake: Preheat the oven to 375°F (190°C). Bake the loaf for 30-35 minutes until the top turns golden brown and sounds hollow when tapped.
  10. Cool and Serve: Remove the bread from the pan and let it cool completely on a wire rack before slicing to ensure the best texture and flavor.

Notes

  • Ensure the milk and water are warm but not hot to avoid killing the yeast.
  • For a nuttier flavor, toast the oats before soaking.
  • Check bread doneness by tapping the bottom; a hollow sound means it’s fully baked.
  • Store leftover bread in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
  • Adjust sweetness by varying the amount of honey according to your taste.
