  • 1 tsp Paprika
  • Cayenne Pepper, to taste
  • 1 1/2 cups Cauliflower Rice
  • 1/2 cup Rotel, drained
  • 1 cup Fiesta Blend Shredded Cheese
  • Salt and Pepper, to taste
  • 5 Zero Carb Street Taco Tortillas, cut into strips

Instructions

  1. Sauté Beef and Vegetables: Add the ground beef, chopped onions, red and green bell peppers to a large skillet over medium-high heat. Cook, stirring occasionally, until the beef is browned and the vegetables are softened. Drain off any excess fat from the skillet.
  2. Add Seasonings: Reduce the heat to medium. Stir in minced garlic, chili powder, cumin, paprika, cayenne pepper to taste, and salt and pepper. Continue to sauté for 1 more minute to allow the spices to bloom and flavor the mixture.
  3. Incorporate Cauliflower Rice and Rotel: Add the cauliflower rice and drained Rotel tomatoes to the skillet. Cook and stir together for 2 minutes until everything is heated through and well combined.
  4. Add Tortilla Strips: Stir in the zero-carb street taco tortilla strips, mixing them evenly throughout the skillet ingredients to add texture and a slight crunch.
  5. Melt Cheese: Sprinkle the Fiesta blend shredded cheese evenly over the top of the skillet mixture. Turn off the heat and cover the skillet briefly, allowing the residual heat to melt the cheese before serving.
