  • 1/21 cup no sugar added pizza sauce
  • 2 garlic cloves, minced
  • 1/2 yellow onion, sliced
  • 1 cup fresh baby spinach
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh oregano
  • crushed red pepper, optional

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough to start cooking the eggplant slices.
  2. Prepare the eggplant slices: Slice the eggplant lengthwise into approximately 1/4 to 1/3 inch thick pieces. Brush or rub both sides of each slice with olive oil, then place them on a baking sheet lined with parchment paper or a baking stone. Season with sea salt and ground pepper. Bake in the oven for 7-10 minutes until the eggplant is hot and beginning to soften.
  3. Sauté the toppings: While the eggplant is baking, heat 1/2 tablespoon of olive oil in a skillet over medium heat.
