For the Steak and Marinade

For the Tzatziki

For the Lemon Vinaigrette
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey (omit for Whole30)
- 1 garlic clove, minced
- ½ teaspoon dried oregano
- Salt & pepper to taste
- Marinate the Steak: In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and black pepper. Coat the sirloin steak thoroughly with the marinade. Cover and refrigerate for at least 30 minutes, up to 4 hours, to allow flavors to penetrate the meat.
- Prepare the Tzatziki Sauce: Mix the plain Greek yogurt (or coconut yogurt), grated cucumber (squeezed to remove excess moisture), lemon juice, minced garlic, fresh dill, salt, and pepper in a bowl. Chill in the refrigerator while preparing other components to meld the flavors.
