Instructions

  1. Sauté Mushrooms: Heat a pan over medium-high heat and sauté half of the mixed mushrooms with smoked paprika, salt, and pepper for about 8-10 minutes until they are beautifully browned. Remove the mushrooms from the pan and set them aside.
  2. Cook Vegetables: In the same pot, add chopped carrots and onion. Cook over medium heat until the onions become translucent, about 5 minutes. Add minced garlic and tomato paste, stirring continuously for 30 seconds to combine the flavors.
  3. Add Flour: Sprinkle the all-purpose flour evenly over the vegetable mixture and stir well to coat everything. This will help thicken the stew.
  4. Combine Ingredients: Return the browned mushrooms to the pot and pour in the red wine, broth, and miso. Stir until all ingredients are well blended.
  5. Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid slightly ajar and let it simmer for about 30 minutes, stirring occasionally, until the stew is thickened and glossy.
  6. Garnish and Serve: Optionally, garnish the stew with fresh parsley for added color and flavor before serving.
