Ingredients

Scale

Coconut Snowmen Truffles

  • 320g (11.25 oz) dairy-free sweetened condensed milk (1 regular can)
  • 4 cups (320g) fine shredded coconut / desiccated coconut, plus extra for rolling

To Decorate

  • 3 tablespoons vegan white chocolate or white candy melts, melted (as needed)
  • 3 tablespoons black-colored icing (as needed)
  • 2 tablespoons orange-colored icing (as needed)
  • 24 thin pretzel sticks, 2 inches (5 cm) each
  • 12 red candy straps, 5 inches (13 cm) each

Instructions

  1. Combine the Base Ingredients: In a large mixing bowl, add the shredded coconut and dairy-free sweetened condensed milk. Mix thoroughly with a wooden spoon or hand mixer until the mixture is well combined and sticky.
  2. Shape the Snowmen: Divide the coconut mixture into approximately 12 larger balls for the snowmen bodies and 12 smaller balls for the heads. Carefully roll each ball in extra shredded coconut to coat them evenly.
  3. Assemble: Pair each large coconut ball with a smaller one. Use a dab of melted white chocolate on the larger ball to stick the smaller ball on top, forming the snowman shape. Let these firm up at room temperature or in the fridge until stable.
  4. Decorate Faces and Buttons: Using piping bags or toothpicks, apply black icing to create eyes and buttons on each snowman. Use orange-colored icing to pipe small noses.
  5. Add Accessories: Insert the pretzel sticks into the sides of the snowmen to serve as arms. Wrap red candy straps around the necks to mimic scarves. If needed, secure the pretzels and candy scarves with a bit of melted white chocolate.
  6. Storage: Store your completed snowmen truffles in an airtight container. They can be kept at room temperature for 1 day, refrigerated for up to 1 week, or frozen for up to 1 month. Note that pretzel sticks may soften over time.

Notes

  • Use dairy-free sweetened condensed milk to keep the truffles vegan and dairy-free.
  • Fine shredded or desiccated coconut works best for smooth texture and easy shaping.
  • You can substitute white candy melts for vegan white chocolate for easier melting.
  • The icing colors can be purchased premade or made at home with food coloring and royal icing.
  • The pretzel sticks may lose their crunch over time, especially if stored in the fridge or freezer.
