  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Chinese black vinegar
  • 1 tbsp Korean chilli powder/flakes (e.g., Gochugaru)

Garnish

  • ¼ cup scallions (green part), thinly sliced
  • 1 tbsp toasted sesame seeds
  • Extra chilli flakes (optional)

Instructions

  1. Prepare the Aromatic Sauce: Heat a small frying pan over very low heat. Add cooking oil, scallions (white part), and minced garlic. Sauté for 5 minutes, stirring constantly to prevent burning and to release the garlic’s aroma.
  2. Simmer the Sauce: Add vegetable broth, light soy sauce, dark soy sauce, Chinese black vinegar, and Korean chilli powder/flakes to the pan. Increase heat to medium-low and simmer for 5 minutes, stirring occasionally to blend all the bold flavors together.
  3. Cook the Noodles: Meanwhile, cook the dried ribbon noodles in a pot of boiling water following the package instructions. Once cooked, drain the noodles thoroughly to avoid sogginess.
  4. Combine Noodles and Sauce: Transfer the drained noodles to the pan with the garlic chilli sauce, tossing everything well to ensure the noodles are evenly coated with the aromatic sauce.
  5. Garnish and Serve: Garnish with scallions (green part), toasted sesame seeds, and extra chilli flakes if desired for additional heat. Serve the noodles hot to fully enjoy their bold, comforting flavors.
