Cookie Dough
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ⅔ cup semi-sweet chocolate chips
Filling
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish to prevent sticking and ensure easy removal of the cookie pie.
- Cream Butter and Sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar using a mixer or spoon until the mixture is light, fluffy, and well combined.
- Add Egg and Vanilla: Beat in the egg and vanilla extract until the mixture is smooth and the ingredients are fully incorporated.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt to evenly distribute the leavening and seasoning before adding to the wet ingredients.
- Make the Dough: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined to avoid overmixing. Fold in the semi-sweet chocolate chips evenly throughout the dough.
- Assemble the Pie: Press half of the cookie dough evenly into the bottom of the prepared pie dish. Spread the Nutella evenly over this dough layer. Then, top with the remaining cookie dough, pressing gently to cover as much of the Nutella as possible.
- Bake: Place the pie dish in the preheated oven and bake for 25 minutes or until the top is golden brown and the edges are set.
- Cool and Serve: Allow the Nutella Cookie Pie to cool for about 10 minutes before slicing to let it set and make serving easier and cleaner.
Notes
- Ensure butter is softened to room temperature for easy creaming.
- Do not overmix the dough once the flour is added to keep the cookie soft and tender.
- You can use a knife or spatula to spread Nutella smoothly over the bottom cookie layer.
- Allow the pie to cool slightly to avoid Nutella oozing out when sliced.
- Store leftovers in an airtight container at room temperature for up to 3 days.
