Soup Base
- 5 pounds potatoes, scrubbed, peeled, and chopped into 1-inch pieces
- Water (enough to cover potatoes)
- 6 cups whole milk
- 1½ teaspoons kosher salt (adjust to taste)
- ½ teaspoon freshly ground black pepper (adjust to taste)
- 2 tablespoons butter (optional)
- Boiling the Potatoes: Place the chopped potatoes in a large pot and cover them with water. Bring to a boil over high heat, then reduce heat and let simmer for 15 minutes, or until the potatoes are fork-tender.
