Crisp Topping

  • ½ cup + ½ cup all-purpose flour (total ½ cup + 2 tablespoons, already 2 tablespoons used in filling)
  • ¾ cup packed light brown sugar
  • ½ cup (1 stick) salted butter, room temperature
  • 1 ¾ cup old-fashioned oats
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 400°F (200°C). Butter a 9×9 inch baking pan thoroughly and set it aside to prepare the filling.
  2. Mix Peach Filling: In a large bowl, combine the thinly sliced peaches with granulated sugar, 2 tablespoons of flour, cornstarch, 1 teaspoon cinnamon, and salt. Stir until everything is well combined to coat the peaches evenly. Pour this mixture into the prepared baking pan.
  3. Make the Crisp Topping: Using the same bowl, cream together the light brown sugar, remaining ½ cup flour, softened butter, and remaining 1 teaspoon of cinnamon until a wet, clumpy mixture forms. Add the old-fashioned oats and mix well until you obtain a coarse texture. Using your hands can help incorporate the oats evenly.
  4. Assemble and Bake: Evenly sprinkle the oat topping over the peach filling. Bake in the preheated oven for 20 to 25 minutes, or until the oats turn a light golden brown around the edges.
  5. Cool and Serve: Remove the peach crisp from the oven and allow it to rest for about 10 minutes so it can cool slightly and set up. Serve warm, optionally topped with vanilla ice cream for an extra indulgent experience.
