  • 10 oz white button mushrooms, sliced (or cremini mushrooms)
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped

Sauce

  • 1 can (10.5 oz) condensed French onion soup
  • 1 tbsp Worcestershire sauce
  • ½ cup cold water
  • 1 tbsp cornstarch

Cheese

  • 2 cups shredded provolone and mozzarella cheese

Seasonings

  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking your pasta dish later.
  2. Cook Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to package instructions until al dente. Drain the pasta and set aside.
  3. Brown Beef and Vegetables: While the pasta cooks, heat a large ovenproof skillet over medium heat. Add the ground beef and begin browning. When the beef is about one-third cooked, add the sliced mushrooms, chopped onion, and green bell pepper. Continue cooking until the beef is fully browned and vegetables are softened.
  4. Add Sauce Ingredients: Lower heat to medium-low. Stir in the condensed French onion soup and Worcestershire sauce into the beef and vegetable mixture.
  5. Thicken Sauce: In a small bowl, whisk together the cold water and cornstarch until smooth. Add this mixture to the skillet and simmer for about 5 minutes, stirring occasionally, until the sauce has thickened.
  6. Combine Pasta and Sauce: Add the cooked penne pasta to the skillet, stirring well to coat all pasta evenly with the sauce mixture. Season with kosher salt and freshly ground black pepper to taste.
  7. Top with Cheese and Bake: Sprinkle the shredded provolone and mozzarella cheese evenly over the pasta mixture. Transfer the skillet to the preheated oven and bake for about 15 minutes, or until the cheese is melted and slightly golden.
