Ingredients

Scale

Dry Ingredients

  • 2¼ cups rolled oats
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Wet Ingredients

  • 1¼ cup milk
  • ⅓ cup maple syrup
  • 2 large eggs
  • 3 tablespoons melted coconut oil (or substitute with butter)
  • 2 teaspoons vanilla extract
  • 3 tablespoons Nutella (plus extra for topping)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Spray an 8×8 inch square baking pan with non-stick spray or line it with parchment paper to prevent sticking. Set aside.
  2. Mix Dry Ingredients: In a large bowl, whisk together the rolled oats, baking powder, and salt to evenly distribute the leavening and seasoning.
  3. Add Wet Ingredients: Pour milk, maple syrup, eggs, melted coconut oil, vanilla extract, and Nutella into the bowl with the dry ingredients. Stir thoroughly until all components are well combined, resulting in a thick batter.
  4. Transfer and Bake: Pour the oat mixture into the prepared baking pan, spreading it out evenly. Place it in the preheated oven and bake for 35 to 45 minutes, or until the center is set and a toothpick inserted comes out mostly clean.
  5. Cool and Serve: Allow the baked oatmeal to cool in the pan for a few minutes to firm up before cutting into squares. Serve topped with extra Nutella—melted briefly in the microwave for a smooth drizzle—and a dusting of powdered sugar if desired.

Notes

  • You can substitute the coconut oil with unsalted butter for a richer flavor.
  • Make sure not to overbake; the oatmeal should be set but still moist in the center.
  • For a vegan version, replace eggs with flax eggs and use a plant-based milk.
  • Leftovers can be refrigerated for up to 4 days and reheated in the microwave.
  • Adding chopped nuts or banana slices before baking can enhance the texture and flavor.
