  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Brown the beef: Heat olive oil in a large skillet over medium-high heat. Season beef pieces with salt and pepper, then brown them in batches for 4-5 minutes on each side. Transfer browned beef to the slow cooker.
  2. Sauté onions and garlic: In the same skillet, add chopped onion and minced garlic. Sauté for 3-4 minutes until softened and fragrant.
  3. Add broth and seasonings: Pour in beef broth and Worcestershire sauce, scraping up any browned bits from the skillet. Stir in dried thyme, dried rosemary, and additional salt and pepper to taste. Pour this mixture over the beef in the slow cooker.
  4. Add vegetables: Add potato chunks and baby carrots to the slow cooker, gently stirring to combine with the beef and broth mixture.
  5. Slow cook: Cover and cook on low for 8 hours or on high for 4 hours, until beef is tender and vegetables are cooked through.
  6. Prepare bread and serve: Toast bread slices until golden brown. Serve slow-cooked beef and vegetables over toasted bread, garnished with freshly chopped parsley.

Notes

  • For extra flavor, you can add a splash of red wine to the broth mixture.
