Smashburger Quesadillas combine the juicy, seasoned flavors of a classic smashed burger with the melty, crispy appeal of a quesadilla. This easy, fun recipe is perfect for weeknights, game days, or any time you want a quick, satisfying meal that blends the best of burgers and Mexican cuisine.

Ingredients

Scale

Beef Layer

  • 1 lb ground beef
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste

Quesadilla

  • 4 large flour tortillas
  • 1 cup shredded cheddar or American cheese

Optional Toppings & Serving

  • Pickles, sliced
  • Diced onions
  • Burger sauce

Instructions

  1. Preheat Skillet: Heat a skillet or griddle over medium-high heat to get it hot and ready for cooking the beef and tortillas.
  2. Form and Season Beef: Press a small handful of ground beef directly onto one half of each tortilla. Evenly season the beef with salt, black pepper, and garlic powder for extra flavor.
  3. Cook Beef Side: Place the beef-covered side of the tortilla down onto the skillet. Cook for 2 to 3 minutes until the beef develops a browned, slightly crispy crust.
  4. Flip and Add Cheese: Carefully flip the tortilla so the cooked beef side faces up. Immediately sprinkle shredded cheese over the cooked beef, allowing it to start melting.
  5. Fold and Grill: Fold the tortilla in half creating a half-moon shape. Grill both sides for an additional 2 to 3 minutes each until the tortilla is crispy and golden brown and the cheese is fully melted.
  6. Slice and Serve: Remove from heat, slice into wedges, and serve hot with optional toppings like pickles, diced onions, and burger sauce for dipping or drizzling.

Notes

  • Use a press or spatula to firmly smash the beef onto the tortilla for maximum browning and flavor.
  • Feel free to customize the cheese blend to your preference, such as adding Monterey Jack or pepper jack for extra zest.
  • To keep tortillas warm while preparing multiple quesadillas, wrap them in foil and place in a low oven.
  • For a healthier twist, substitute ground turkey or plant-based beef alternatives.
  • Serve immediately for best texture as quesadillas tend to get soggy when cooled.
