Ingredients

Scale

Filling

  • 1 cup fresh spinach, chopped and lightly sautéed or thawed frozen spinach squeezed dry
  • ½ cup feta cheese, crumbled
  • ¼ cup cream cheese, softened
  • 1 garlic clove, minced
  • ½ tsp dried oregano or Italian seasoning
  • ¼ tsp black pepper
  • Pinch of salt (optional)

Pastry

  • 1 sheet puff pastry, thawed if frozen

Topping

  • 1 egg, beaten (for egg wash)
  • Coarse sea salt for sprinkling (optional)

Instructions

  1. Prepare the filling: In a bowl, combine the chopped and sautéed spinach, crumbled feta cheese, softened cream cheese, minced garlic, dried oregano, black pepper, and a pinch of salt if needed. Stir thoroughly until the mixture becomes creamy and well combined.
  2. Preheat and prepare baking surface: Set the oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  3. Assemble the twists: Lightly roll the puff pastry sheet to smooth it out. Spread the spinach-feta mixture evenly over half of the pastry sheet. Fold the pastry over so that the filling is covered.
  4. Cut and twist: Cut the folded pastry into strips approximately 1 inch wide. Carefully twist each strip several times to create the twist shape and arrange them spaced out on the prepared baking sheet.
  5. Brush and season: Brush each twist generously with the beaten egg wash to help crisp and brown the pastry during baking. Optionally, sprinkle coarse sea salt over the twists for added texture and flavor.
  6. Bake: Place the baking sheet in the preheated oven and bake for 18 to 22 minutes, or until the twists are puffed up and have a beautiful golden brown color.
  7. Serve: Remove from oven and allow to cool slightly before serving warm for best taste and texture.

Notes

  • Spinach can be fresh or frozen; if using frozen, ensure excess moisture is squeezed out for best results.
  • Adjust salt carefully since feta cheese is naturally salty.
  • Use an egg wash to achieve a shiny, golden crust.
  • For a vegetarian option, this recipe is suitable as is.
  • These twists can be made ahead and reheated in the oven to restore crispiness.
  • Serve with a side of marinara sauce or tzatziki for extra flavor if desired.
