Ingredients

Scale

Main Ingredients

  • 4 medium tortillas (flour, whole wheat, or gluten-free)
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil or butter, for cooking

Optional Add-ins

  • ¼ cup sun-dried tomatoes, chopped
  • ¼ cup black olives, sliced
  • ½ cup cooked grilled chicken, diced

Instructions

  1. Prep the Ingredients: Rinse the fresh spinach under cold water and chop it finely. Place the crumbled feta cheese into a mixing bowl. If you plan on using optional add-ins like sun-dried tomatoes, olives, or grilled chicken, prepare and chop these ingredients so they are ready to use.
  2. Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Evenly spread the chopped spinach and crumbled feta over one half of the tortilla. Add any optional ingredients if you desire for extra flavor and protein. Fold the tortilla in half gently pressing to seal the ingredients inside.
  3. Cook the Quesadillas: Preheat a non-stick skillet over medium heat and add a small amount of olive oil or butter. Place the folded quesadilla into the skillet and cook it for 2 to 3 minutes on each side, or until the outside is golden brown and crispy and the cheese inside begins to melt.
  4. Slice and Serve: Remove the cooked quesadilla from the skillet and place it on a cutting board. Using a sharp knife or pizza cutter, slice it into wedges. Serve the quesadilla warm with your choice of dips like salsa, guacamole, or sour cream for a delicious meal or snack.

Notes

  • Use whole wheat or gluten-free tortillas to suit dietary needs.
  • To make it vegetarian, omit the grilled chicken or use a plant-based substitute.
  • For a lower fat option, use olive oil instead of butter for cooking.
  • To ensure even cooking, do not overfill the tortilla with fillings.
  • Serve immediately for best texture and flavor as the quesadilla crisps up when fresh.
