  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Cornmeal Layer:

  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg

Additional Ingredients:

  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 350°F. In a large skillet, cook the ground beef and onion until browned. Drain excess fat.
  2. Stir in black beans, diced tomatoes, spices, and simmer.
  3. Combine cornmeal, milk, and egg; spread half in a greased baking dish.
  4. Layer beef mixture, top with remaining cornmeal.
  5. Sprinkle with cheese and olives, then bake until set.
  6. Let cool, garnish with cilantro, and serve.

Notes

  • For a vegetarian version, substitute the ground beef with sautéed bell peppers, mushrooms, and zucchini.
