Sauce and Seasoning

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • ¼ cup chicken broth
  • ¼ teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Cook the Spaghetti: Boil a large pot of salted water and cook the spaghetti al dente according to the package instructions. Drain and set aside.
  2. Sauté Garlic: While the pasta cooks, heat olive oil and butter in a skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Cook Tomatoes: Stir in the halved grape tomatoes, chicken broth, and Italian seasoning. Cook for about 5 minutes, stirring occasionally, until the tomatoes soften and release their juices.
  4. Add Shrimp and Spinach: Add the shrimp to the skillet, followed by the baby spinach. Reduce heat to medium. Cook for about 5 minutes, stirring occasionally, until shrimp turn pink and are cooked through and spinach is wilted.
  5. Season and Combine: Season with salt and pepper to taste. Toss the shrimp and vegetable mixture with the cooked spaghetti until evenly combined. If the pasta needs more sauce, add a splash of the reserved hot pasta water.
