These Turkey and Stuffing Meatballs are a flavorful and moist twist on traditional meatballs, combining ground turkey breast with finely chopped mushrooms, celery, onions, dried cranberries, and cornmeal stuffing. They are seasoned with poultry spices and garlic powder, then baked to juicy perfection. Perfect for appetizers or a festive snack, they can be served warm with cranberry sauce for dipping.

Ingredients

Scale

Vegetables

  • ½ lb. mushrooms, finely chopped (about 3 cups)
  • 1 cup onion, finely chopped (about ½ large onion)
  • ½ cup celery, finely chopped

Main Ingredients

  • 1 lb. ground turkey breast
  • ½ cup coarsely ground cornmeal or dry cornbread stuffing
  • ½ cup dried cranberries
  • 1 egg, lightly beaten

Seasonings

  • 1 teaspoon poultry seasoning
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 375ºF (190ºC) and prepare a sheet pan by lining it with parchment paper or lightly greasing it with oil to prevent sticking.
  2. Combine Ingredients: In a large mixing bowl, blend together finely chopped mushrooms, onions, celery, ground turkey breast, cornmeal or dry cornbread stuffing, dried cranberries, beaten egg, poultry seasoning, garlic powder, kosher salt, and black pepper until well combined.
  3. Form Meatballs: Using a meatball scoop or melon baller, shape the mixture into 24 meatballs about 1½ inches in diameter. The mixture should be moist but cohesive enough to hold shape. Place the meatballs about 1 inch apart on the prepared sheet pan.
  4. Bake Meatballs: Bake the meatballs uncovered in the preheated oven for 18 to 22 minutes, or until the internal temperature reaches 165ºF (74ºC) to ensure they are fully cooked and safe to eat.
  5. Serve: Remove from oven and serve warm. These meatballs can be enjoyed as is using mini skewers or paired with cranberry sauce for dipping. For an extra touch of color and freshness, sprinkle with chopped parsley before serving.

Notes

  • Use fresh herbs like parsley or thyme for additional flavor if desired.
  • If you prefer gluten-free, use gluten-free cornbread stuffing or substitute with gluten-free breadcrumbs.
  • Ensure meatballs are spaced apart on the baking sheet to allow even cooking.
  • Use a meat thermometer to accurately check doneness to avoid overcooking and drying out the meatballs.
  • These meatballs freeze well; store cooled meatballs in airtight containers for up to 3 months.
